FRESH APPLE CAKE AND FROSTING
3 Eggs
2 Cups sugar
1/2 cup oil
1 tsp. salt
2 tsp vanilla
2 tsp baking soda
2 tsp. cinnamon
2 cups flour
3/4 cup chopped nuts
4 cups diced, unpeeled apples
Mix ingredients in order given. Bake in greased and floured 13x9x2 inch pan
at 350 degrees for 45 to 60 minutes.
Frosting
4 tsp butter
1 tsp. vanilla
8 ounces Philadelphia cream cheese
1 to 2 cups 10x sugar
Cream together and spred on cooled cake. Delicious without the frosting also.
Very moist. Serves 12 to 16.
